Vegetable Oil

2c. of Goya rice

1 3/4c. water
**********
Procedure
**********
-
In a large Pot, add Oil just enough to cover the bottom. Turn stove on to
medium
-
Slice Kielbasa into cubes or disks (any size you wish) and add to pot
(stirring meat occasionally)
-
After about 5 minutes, add pink beans (stirring occasionally)
-
Add 1 cup of sofrito (if you like it spicy, add another 1/2 cup)
-
Add 2 packets of Sazon and stir.
-
Let sit for 5 minutes (stir occasionally)
-
Add rice and water simultaneously(water should be just above the level of
rice).
-
Wait til it comes to a boil, cover with lid, turn on low.
-
Let cook for 25 minutes - check the pot now and then to be sure you have
enough water but do NOT stir.
-
When done, stir with large fork to mix the rice and meat.
-
Notes:
-
*can be found in the ethnic section of the supermarket.
-
+You can substitute Kielbasa for Salami, pepperoni, ham, fish, pork or linguica
-
*Adobo is a great seasoning you can use on nearly anything (meats,
potatoes etc). It's a great salt substitue.
-
#Pink beans can also be substituted for Black eyed peas
-
Add Ketchup, hot crushed pepper or Italian dressing for an extra zippy flavor
(personally i don't like it with ketchup as others do but Italian dressing
is a delicious addition)
-
Recipe cooks better in a heavy steel pot. They can be found in any
spanish store or professional cooking stores. Other similiar pots can be
found in some regular supermarkets.
|
Another delicious way
to cook this dish:
-
Follow the above instructions 1-6 (substitute
kidney beans for the pink beans)
-
Add cutup potatoes (small/medium cubes, triangles, etc) to the pot.
-
Stir in 2 cups water
-
Cook the rice in a seperate pan.
-
Add alittle more water if needed during cooking.
-
Simmer until potatoes are done.
When ready, it makes a
great sauce with the potatoes and beans to pour over the rice. Men
seem to prefer it prepared this way. Enjoy!
