Jylia's Wild Boar Potpie

Ingredients:

  1. 5 pounds chopped wild boar

  2. 2 large onions, chopped

  3. 7 potatoes, cubed

  4. 7 teaspoons salt

  5. 2 teaspoons pepper

  6. 1 teaspoon each of the following:

  7. allspice, cloves, thyme, sage, cinnamon

Directions:

  1. Cover meat with water in large pot

  2. add all spices and simmer gently for approximately 3 hours or until meat looks "juicy".

  3. Add cubed potatoes and cook 1 more hour.

  4. Remove from heat and chill (don't freeze) overnight.

The next day, skim fat off top, and fill pie crusts with mixture.  Heat & Serve.  Makes 7 pies.
