I tried to read The Fellowship of the Ring three times, but I never even made it out of the Shire. I just couldn't get into the story.
Then I saw the movie. I went home that day and the read the whole trilogy to find out what came next. Now I've also read The Silmarillion and The Hobbit and I'm working on Unfinished Tales. I will mark the stories I recommend that are Silmarillion-based.

If I Were Queen of the Forest by Halrloprillalar (various, R)
Well, what would you do if you were queen of the forest?
Boromir passed a hand over his forehead. "I mean, of course I've been with women. Many women. Just not with a man."
"Why not?"
"Well, it's not very manly, is it?"
"On the contrary," said Aragorn. "Two men, together, is the most manly thing there is."
"I don't really--"
"Here," said Aragorn and laid his hand on Boromir, in a most intimate place. Boromir hated to admit it to himself, but he was suddenly feeling very manly indeed.
This fic makes me giggle every time I read it. And for some reason when Galadriel refers to herself in the third person ("There is little that surprises Galadriel any longer," she said) it reminds me of a Weiß Kreuz fic called Uncle Yohji's Book of Love--if you've read it, you'll know what I mean.

The Making of Samwise by Bill the Pony (Sam/Frodo, mostly G)
A long, lyrical series. Absolutely wonderful use of dialect. Dialect is horrific when it's done wrong, but this series gets it very, very right. It's a WIP, 66 parts and counting so far, but it would be worth reading if it was never finished. Still updated every couple of weeks, often with a few parts at once.

Prism of Light and Time Enough by Jenwyn (Boromir/Legolas, R)
Gentle, lyrical and wonderful. In Lothlorien, Legolas goes to Boromir to feel out his mind.

The Unspoken Arc by Runedancer (Elrohir/Glorfindel, NC-17)
This story really has too many pairings to list; suffice it to say, the male elves get a lot of sex. A lot of sex. This story might be confusing if you don't have some idea who the characters are; if you haven't read The Silmarillion you can look up the characters in The Encyclopedia of Arda as you go along. It's worth it.
In Unspoken, Elrohir lusts after his own father in secret--until Glorfindel finds out. Revelations is an Elrond/Celeborn PWP; Changes features Galadriel's reaction and introduces Gildor Inglorion. One Last Time tells Gildor and Glorfindel's pasts in a series of flashbacks. Quid Pro Quo is another PWP. Wild Justice brings the series to a resounding conclusion.
I find the plot of the Uncpoken arc unnecessarily complex, but some of the character interactions make up for it. Especially the dynamic between Elrohir/Glorfindel, and later (or earlier, depending on how you look at it) between Ecthelion and Glorfindel. Chapters 22 and 33 in Wild Justice are incredibly good and very funny. I wish I had dreams like Elrohir's...
